Exactly the same as last week. Considering that I had a bad week including a lovely "eating" holiday (St Patricks Day) yesterday I will take it. Much better than a gain anyway. I actually had a recipe give me a major hiccup. I needed to calculate the points and kept putting it off and putting if off etc. In the mean time, I was waiting to log all the rest of the food I was eating, thinking that I will get them all down as soon as I finish up that specific recipe. Needless to say I never did get that recipe figured and the logging was spotty at best. BTW I run into a problem when I figure recipes....I have a site that helps me find the nutritional facts (click here to get the the site) but I have difficulty deciding how many servings the recipe actually has. Especially on a pot of soup. Any suggestions? All in all, I will call this week a win because I was truly expecting a gain. Yay! Not bad considering my daughter had a birthday in the middle of the week with the cake AND the ice cream AND dinner out. In fact last night as my family was whipping out the ice cream for dessert I instead cooked up some zucchini for myself. Honestly that would have never happened in the past. Don't get me wrong I was tempted by the ice cream. It was hard but I did it and I was actually satisfied too. So weird. So nice. (she's drop dead gorgeous BTW!) Oh my! So eye opening it was! Everywhere I turned was a mirror...Literally all the walls as far as the eye could see were nothing but mirror. Even the doors etc. I knew I had a problem and it was staring me in the double chinned face. ARGH! Something I should mention...I avoid mirrors and pictures with a passion. I honestly avert my eyes when a mirror is present and do my very best to keep out of any picture. On Facebook my picture is a rose. I hate seeing myself and the truth of my appearance. I am ashamed of myself and what I have allowed myself to become. Now, on top of all the mirrors my little brother is getting married in Sept. I really don't want to be the big fat one in the pictures. Ya know, the one in the center of the pic with all the heads poking around? I would love to see a picture of me and say Yeah! That is me! without the drooping shoulders and face to the floor. If I keep going this way my next step will be to talk to everyone behind a door like Eleanor Roosevelt.

(did you know she did that?)

SO

I have a new plan of attack

1. I was scared to say the least. I have been wallowing the the dust of my falling off the wagon again. The only thing I have been religious about this last while is doing my best to rid myself of my caffeine addiction. (talk about headaches! First I was afraid I was going to die and then I was afraid I wasn't going to die LOL!!) but I am finally there. I still drink it when we (my most adorable husband and I) go out because I have a need for "special" water that my father in law distills for us. Nasty water sends me over the edge and most restaurants serve it. I didn't realize how much different tap water was until I was only drinking his steam distilled water but now I can definitely tell!! AND I don't want to drink a sugary soda so most times the only option is the diet cola but I am no longer buying it to have in my home and only get it once or twice a week. I am very proud of myself! I am drinking A LOT more water because of the cut back on the soda!! The other thing I picked up is treadmilling in my garage every day for 45mins to an hour. Which has been an adventure in and of itself. Including my little angel Sarah locking me in the garage. Don't worry! I got out. LOL! (and it only took about 15 minutes too) So, My results.....I have lost 3 pounds!! Wow! Jason, (super hubs!) told me to focus on exercise, getting more sleep, and drinking more water. Not to worry about the food at all until these things are mastered. That is all I have done. Thanks babe! YOU ROCK!! Thank you to my sweet baby sister for giving me the nudge to write again! Its nice to know someone is looking for me out there!! Loves to all!!

Emily
Unknownnoreply@blogger.com2tag:blogger.com,1999:blog-3362282017711693088.post-25809538854589747182010-07-26T10:45:00.000-06:002010-07-26T10:45:59.303-06:00Stove Top Meatloaf
Stove Top Meatloaf

2 pounds of 96% lean ground beef (24 points)

1 package Stove Top Stuffing - I use the Low Sodium Chicken flavor (12 points)

1/2 cup eggbeaters (2 points)

1 cup water

Preheat oven to 350 degrees. Mix all ingredients together and add a bit of ketchup and Dijon mustard (optional). Divide into 2 loaves, coat with a thin layer of ketchup or barbecue sauce and bake for 45 minutes or more until meat is no longer pink.

Serves - 8

WW Winning Points - 4.75 per serving (I count it as 5 points to cover the ketchup that I use)

Total recipe is 38 points so you can choose to get more or less servings depending on how many points you have to spend. ****Be sure to adjust points if you use a different grade of beef. This is delicious (even for people who normally don't like meatloaf). Hope you enjoyUnknownnoreply@blogger.com1tag:blogger.com,1999:blog-3362282017711693088.post-36982168050909219532010-07-23T09:46:00.000-06:002010-07-23T09:46:03.020-06:00Today I lost....

The scale says today I lost .4 pounds.
Paris’ Old World Minestrone Soup

3 tbsp chopped garlic

1 cup chopped onion

¾ diced celery

2 cups non-fat chicken broth

1 12-oz can Spicy V-8

1 ½ cups shredded carrots

1 14.5-oz can Hunt’s Diced Tomatoes w/ Onion, Basil & Oregano

½ cup frozen baby peas

1 cup Great Northern beans, rinsed and drained

1 ½ tsp Italian Seasoning

½ tsp red pepper flakes

1/3 cup Ditalini or any small pasta

1 ½ cups finely shredded fresh spinach

In a large French oven misted with olive oil, sauté onion, celery and garlic over medium heat until fragrant, about 5 minutes. Add in the chicken broth and V-8. Then add the carrots and tomatoes. Cook for about 10 minutes. Then add the peas and beans to the pot and season with the Italian seasoning and red pepper flakes. Allow to cook another 10 minutes at a simmer over medium-low heat. Add in the Ditalini and cook for another 7 minutes – may need to add up to ½ cup water if soup is looking thick. Finally, add the fresh spinach in and allow to cook 3-4 minutes. Take pot off of the stove and allow to cool 5 minutes if serving immediately or at least 30 minutes if storing in individual cups in the freezer.
(let me tell you I was thrilled it wasn't a gain after being a bad naughty baby all week!!) The only thing I have really done is tried to keep track of serving sizes and not over do it. Next week? Back to the grind stone. Come to find out My Man has been doing very well away at camp (13000 steps a day etc) and is fired up to get the treadmill out!! Yay! That is going to help a lot! Also, my girlies want to walk in the evenings and invited their mom! Woot! Who would have guess I'd give birth to some of my best friends in the whole wide world?!? Preheat oven to 375 degrees. Cut hot dog into 4 even pieces. Stretch or roll out the triangle-shaped dough slightly, to make it a larger triangle. Cut dough into 4 long, narrow triangles. Beginning at the base of each triangle, roll a piece of the hot dog up in the dough until the point of each triangle wraps around the center. Place dogs on an ungreased baking pan and cook for about 12 minutes (until dough appears slightly browned and crispy). Enjoy!

Good For You Jalapeno Poppers

Ingredients:

5 whole, fresh jalapenos

1/4 cup fat-free cream cheese

1/4 cup shredded fat-free cheddar cheese

1/2 cup Fiber One cereal

1/4 cup Egg Beaters, Original

Optional: salt, pepper and/or garlic powder

Directions:

Preheat oven to 350 degrees. Halve the jalapenos lengthwise, and remove the seeds, stems, and membranes (HG Heads Up: Be VERY careful when handling jalapenos; wash hands frequently and well, and avoid touching your face and eyes). Wash halves and dry them very well; set aside. Next, stir to combine cream cheese and cheese shreds. If desired, season cheese mixture with salt, pepper, and/or garlic powder. Using a blender, grind Fiber One to a breadcrumb-like consistency. If you like, season crumbs with salt, pepper, and/or garlic powder. Place crumbs in one small dish and Egg Beaters in another. Stuff each pepper half with cheese mixture. Next, carefully coat both sides of each pepper half with Egg Beaters, and then with Fiber One crumbs. Place peppers on a baking pan sprayed with nonstick spray, and place in oven. Cook for 25 minutes (for very spicy poppers) to 30 minutes (medium-hot poppers). Makes 10 poppers.

Even long-term exercisers may have misconceptions about exactly what some fitness terms mean. Here are some definition of words and phrases you're likely to encounter:

Aerobic/cardiovascular activity. These are exercises that are strenuous enough to temporarily speed up your breathing and heart rate. Running, cycling, walking, swimming, and dancing fall in this category.

Maximum Heart Rate is based on the person's age. An estimate of a person's maximum age-related heart rate can be obtained by subtracting the person's age from 220.

Flexibility training or stretching. This type of workout enhances the range of motion of joints. Age and inactivity tend to cause muscles, tendons, and ligaments to shorten over time. Contrary to popular belief, however, stretching and warming up are not synonymous. In fact, stretching cold muscles and joints can make them prone to injury.

Strength, weight, or resistance training. This type of exercise is aimed at improving the strength and function of muscles. Specific exercises are done to strengthen each muscle group. Weight lifting and exercising with stretchy resistance bands are examples of resistance training activities, as are exercises like pushups in which you work against the weight of your own body.

Set. Usually used in discussing strength training exercises, this term refers to repeating the same exercise a certain number of times. For instance, a weight lifter may do 10 biceps curls, rest for a few moments, then perform another "set" of 10 more biceps curls.

Repetition or "rep." This refers to the number of times you perform an exercise during a set. For example, the weight lifter mentioned above performed 10 reps of the bicep curl exercise in each set.

Warm up. This is the act of preparing your body for the stress of exercise. The body can be warmed up with light intensity aerobic movements like walking slowly. These movements increase blood flow, which in turn heats up muscles and joints. "Think of it as a lube job for the body," Bryant explains. At the end of your warm-up, it's a good idea to do a little light stretching.

Cooldown. This is the less-strenuous exercise you do to cool your body down after the more intense part of your workout. For example, after a walk on a treadmill, you might walk at a reduced speed and incline for several minutes until your breathing and heart rate slow down. Stretching is often part of a cooldown.
