Mouth Watering Monday-Banana Blueberry Muffins!!

Banana Blueberry Muffins

Makes 12 muffins, 2 points each

1 1/4¼ cup mashed ripe banana (approx. 3)

1 cup wheat bran

2/3 cup milk

¼1/4 cup packed brown sugar

1 tsp vanilla

1 large egg, lightly beaten

1 ½ 1/2 cup all-purpose flour

2 tsp baking powder

1 tsp cinnamon

½1/2 tsp salt

1 cup fresh or frozen blueberries (unthawed)

Preheat oven to 375F. Spray 12 muffin tins with non-stick spray (don't use papers, these muffins don't peel out of muffin papers very well).

Combine first 3 ingredients in a medium bowl. Let stand 5 minutes. Stir in sugar, vanilla, and egg.

Combine flour, baking powder, cinnamon, and salt in a large bowl.

Add banana mixture and stir just until moist. Fold in blueberries.

Spoon into 12 muffin cups and bake 25 minutes or until muffins spring back when touched lightly in center. Serve warm. Store or freeze in an airtight container.

  1. Hi, these look delicious! Any idea how many calories, carbs, grams of protein or sugar...? I can figure it out, but if you know that would be much easier!
